His gluten-free Sweet Potato and Mushroom Cannelloni, made with Upper Canada ricotta, grape tomatoes, roasted garlic and black lentil sauté pairs perfectly with the 2010 Megalomaniac Home Grown Red, local wine. Another dish of Massimo’s, the Linguini Carbonara with smoked chicken, bacon and zucchini ribbons tossed in chardonnay cream sauce is perfectly paired with the 2007 Southbrook Triomphe Chardonnay, also made in Niagara’s backyard.
