Rainbow Room by Massimo Capra gave American Express Delights everything and more as Chef Massimo Capra brought Tuscany to Niagara Falls in partnership with Crowne Plaza Hotel and American Express. American Express Delights is a unique program for American Express Card-holders in which one-of-a-kind events around the world can be experienced.
A Tour through Tuscany with Chef Massimo Capra took place June 8th, 2012 at the Fallsview Rainbow Room. Nearly 70 guests came together for this culinary experience.
The event began with a Meet & Greet with Celebrity Chef Massimo Capra, and book signing of cookbook “3 Chefs” by Michael Banacini, Massimo Capra, and Jason Parsons. The open-kitchen portion of the Fallsview Restaurant in the Crown Plaza Hotel allowed Massimo Capra to demonstrate the preparation of one of his unique hors d’oeurves. Fallsview Executive Chef, Kevin Maniaci, ensured the menu was served to perfection as well as greeted guests. Many guests completed their stay with the over-night package at Crowne Plaza Hotel Niagara Falls.
The menu began with an antipasti followed by a seafood soup in a saffron tomato broth. The baby arugula salad was topped with candied grapes, pinot gris and a citrus vinaigrette. The Cherry tomato and butter topped Spring Pea Raviolone and main dish, braised veal served with semotina polenta, asparagus and honey mushrooms, show off Tuscan dishes while featuring fresh local ingredients. Crostata di Ricotta, a favourite in many regions of Italy, completed the meal. Each course was completed with a Colanery Wine to complement the unique flavours of each dish.
